1) Know how to make at least three different icings and what each is suitable for.

2) Be able to colour icing successfully.  

3) At the test, use two icings to decorate:

a) A cake suitable for a child's birthday party.

b) Small biscuits.

This clause should include the use of a piping bag and nozzle.

4) Bring to the test a selection of cooked and uncooked sweets which you have made and presented attractively in a small container and tell the tester how you made up one sweet recipe.
